Egyptian Spinach, Corchorus olitorius, is becoming very popular as a summer vegetable in our part of the world. It is also known as Molokhia/Molokheiya as well as many other names. It is believed to have originated in Egypt long before the time of Christ and was a staple food there since the time of the Pharaohs.
